Summer Chickpea Salad

This easy, no-cook salad by Shayna Feinerman, MS RDN, is as nourishing as it is refreshing. Chickpeas provide plant-based protein and fiber that support steady energy, healthy digestion, and balanced blood sugar, while extra-virgin olive oil adds heart-healthy fats and anti-inflammatory polyphenols. Cucumber and tomatoes bring hydration and antioxidants like lycopene and vitamin C, and fresh parsley offers an extra dose of vitamins and plant compounds. Together, it’s a light but satisfying dish that fits beautifully into a mostly plant-based, Longevity Diet–inspired way of eating, ready in about 10 minutes.

Equipment needed: A large bowl, measuring spoons

INGREDIENTS 

  • 2 cans chickpeas (15 oz each), drained and rinsed
  • 1 cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 1/3 cup fresh parsley, chopped
  • 3 tablespoons tbsp extra-virgin olive oil
  • 2 tablespoons tbsp fresh lemon juice
  • 1/2 teaspoons salt
  • 1/3 teaspoons black peppeR

DIRECTIONS

  1. Combine: In a large bowl, combine 2 cans chickpeas (15 oz each), drained and rinsed, 1 cucumber, diced, 2 cups cherry tomatoes, halved, and 1/3 cup fresh parsley, chopped.
  2. Dress and toss: Drizzle with 3 tablespoons tbsp extra-virgin olive oil and 2 tablespoons tbsp fresh lemon juice, then season with 1/2 teaspoons salt and 1/3 teaspoons black pepper. Toss well.
  3. Serve: Serve right away, or chill for 10 minuteS
