String Beans in Tomato Sauce

INGREDIENTS

  • 800 g (1.7 lb) green beans
  • 500 g (1 lb) fresh or canned tomatoes
  • 1 small onion
  • 1 stick of celery
  • 1 carrot
  • 2 cloves of garlic
  • Parsley
  • Basil
  • Extra virgin olive oil
  • Salt
  • Pepper

  • 45 minutes
  • Easy

PREPARATION

Remove the tips of the string beans and place the string beans in a casserole pot with the rest of the vegetables, parsley, tomatoes, oil, salt, and pepper. Cover and cook slowly until the string beans are done.

NUTRITIONAL VALUE 

Green beans are a good source of folate. Using them raw in the recipe (without pre-boiling) allows you to keep most of the folate. In this way, a portion of this recipe will be able to meet about a third of the daily requirement.
