SEED CRACKERS – Diabetes Awareness Month

SEED CRACKERS

INGREDIENTS

    • 150 g (ca. 5.3 oz) of seeds (sunflower, sesame, flax, poppy)
    • 50g (ca. 1.8 oz) of whole wheat flour
    • 50g (ca. 1.8 oz) of buckwheat flour
    • 100 ml (1/2 cup) of water
    • 40 ml (2 ½ tbs) of EVO oil
    • a pinch of salt

PREPARATION

Mix 150 g (ca. 5.3 oz) of seeds (sunflower, sesame, flax, and poppy) with 50g (ca. 1.8 oz) of whole wheat flour and 50g (ca. 1.8 oz) of buckwheat flour. Mix 100 ml (1/2 cup) of water with 40 ml (2 ½ tbs) of EVO oil and a pinch of salt. Combine the two mixtures, mix, and shape into a ball. Arrange it between two sheets of baking paper and roll it out with a rolling pin. Place the dough you have just spread on a baking tray and bake at 180°C (356°F) for about 10 minutes. Once cooked, let it cool slightly and cut the dough into the classic shape of crackers. 

NUTRITIONAL VALUE 

Seeds are rich in fiber and fats, which slow down the absorption of carbohydrates, helping to keep blood sugar levels stable. Additionally, the fats in seeds are a source of omega-3 fatty acids, which support cardiovascular health and reduce the risk of heart disease, which is often higher in people with diabetes. Finally, unlike bread, which often contains refined carbohydrates, seed crackers are made with more natural ingredients and, when prepared with whole grain flours, contribute to slower and more controlled digestion.
