Marinated/Fermented Eggplant in Oil (Melanzane Sott’Olio a Crudo)

​This “raw” method preserves the texture and nutrients of the eggplant better than boiling. It’s a patient process that rewards you with a burst of Mediterranean flavor.

INGREDIENTS 

  • 2 kg Firm Eggplants (Round or Long)
  • 1 Liter White Wine Vinegar (or Apple Cider Vinegar)
  • 4 cloves Garlic (peeled and sliced)
  • 2-3 Fresh Chili Peppers (red)
  • 1 handful Fresh Mint or Dried Oregano
  • Coarse Salt (as needed)
  • Extra Virgin Olive Oil (high quality, for jars)

  • Resting Time: 12–24 hours
  • Maturity: Ready to eat after 3–4 weeks in the pantry.

STEP BY STEP PREPARATION

  1. Prep the Eggplant: Peel the eggplants and cut them into thin strips (matchsticks).
  2. The Salt & Vinegar Cure: Place the strips in a glass bowl or a colander. Layer them with coarse salt and pour the vinegar over them.
  3. The Press: Place a plate over the eggplant with a weight on top (like a pot of water). Let them sit for 12 to 24 hours. This removes the bitter water and “cooks” the eggplant with acidity.
  4. The Squeeze: After resting, rinse the eggplant slightly if too salty, then squeeze them very tightly—using a potato ricer or a clean cloth—to remove all liquid. They must be as dry as possible.
  5. Seasoning: In a bowl, toss the dry eggplant with sliced garlic, chili, and mint or oregano.
  6. Jarring: Pack the mixture into sterilized glass jars. Press down firmly to remove air bubbles.
  7. The Oil Bath: Cover completely with Extra Virgin Olive Oil. Leave the lid resting on top (not tightened) for a few hours to let air bubbles escape, then top off with more oil if needed and seal tightly.
