Marinated Anchovies

INGREDIENTS

  • 600 g (1.3 lb) fresh anchovies
  • 2 cloves of garlic
  • 1 sprig of parsley
  • The juice of 2 lemons or 2 glasses of white wine vinegar
  • 4 tbsp extra virgin olive oil
  • Red pepper

PREPARATION

Gut the anchovies and remove the heads and bones. Rinse them under running water, and place them in a baking dish. Cover them with a sauce of oil, finely chopped garlic, lemon or vinegar, and pepper. Add the finely chopped parsley. Leave to rest in the fridge for at least 3-4 hours and serve garnished with lemon slices. 

 

NUTRITIONAL VALUE 

Anchovies are rich in iron, calcium, selenium, vitamin D, and long-chain omega-3 fatty acids. A portion of this recipe is therefore very nutritious. Furthermore, adding fresh chili and lemon, rich in vitamin C, improves the absorption of the iron in the recipe.
