Healthy Burrito

Ingredients: Serves 1

1 extra large whole wheat tortilla

1/2 cup low sodium refined beans

1/4 cup thawed frozen corn

1/4 cup grated carrot

1/4 cup broccoli sprouts

1/4 avocado

3 tablespoons salsa

PREPARATION

Spread refried beans on the tortilla to make a line in the center, leaving about 1-inch room on the ends. Layer corn, carrot, sprouts, avocado, and salsa in a line in the center of the tortilla. Fold two edges of the tortilla in, and roll to make a burrito. Store in an airtight container or wrap well in aluminum foil to enjoy as a meal or snack on the go to be eaten that day, or store in the fridge for up to one week.
