Farro with Wild Greens

INGREDIENTS

  • 300 g (10.5 oz) farro or spelt (husked)
  • 200 g (7 oz) misticanza (mixed wild greens)
  • 1 onion
  • 2 cloves of garlic
  • 1 sprig of parsley
  • 3 dried tomatoes
  • 1 dried chili pepper
  • 1 cup of white wine
  • Extra virgin olive oil
  • Salt

  • 1.5 hour
  • Easy

PREPARATION

Wash the vegetables and cook them in salted boiling water. Drain them, keeping the water aside, to use as a broth to cook the spelt. In a pan, brown the garlic and onion in a little oil, then pour the spelt and toast it. Add the wine, let it evaporate, and add the water from the vegetables a little at a time. When almost cooked (about 1 hour) add the mixed salad, chopped parsley, dried tomatoes, and chili. Stir and serve. 

NUTRITIONAL VALUE 

Spelt is a good source of dietary fiber. One serving of this recipe contains about one fifth of the recommended daily intake.
