Collard Greens and Fava Beans

Ingredients (Serves 4)

  • 1 kg (2.2 lb) beet or collard greens
  • 400 g (14 oz or 3 cups) fresh shelled fava beans
  • 3 cloves of garlic
  • 1 small chili pepper
  • Extra virgin olive oil
  • Salt Boil the greens and fava beans for 10 minutes.

Preparation

Briefly sauté the garlic in the oil and a tiny amount of water. Add the greens, fava beans, and sliced chili pepper. Add salt as needed, cook for 5 minutes, and serve. Thanks to the beet greens and fresh fava beans, this recipe is rich in minerals and folates. To preserve the nutritional content, cook briefly (approx. 10 minutes) in a small amount of water.
