Bulgur, Mushroom, Chickpea, and Pumpkin Poke Bowl

Ingredients: for 1 person

Ingredients:

  • 80g (1cup or 2.8 oz) of bulgur
  • 80 g (2.8 oz) of champignon mushrooms
  • 30g(1⁄4 cup or 1oz) of precooked chickpeas
  • 100 g (3.5 oz) of cooked pumpkin
  • 50 g (1.8 oz) of leek
  • Juice of a half lemon
  • 1 tablespoon of sesame seeds

Preparation:

Cook the bulgur (a grain made from parboiled, cracked wheat) in plenty of water for about ten minutes. Cut the leek and fry it lightly with a little chili. Add the sliced mushrooms and cook it over low heat for about 10 minutes. Add the cooked pumpkin and turn off the heat. At the bottom of a bowl, lay the mix of vegetables on one side, the chickpeas on the other, and the bulgur on top. Finally, add the lemon juice and sesame seeds.
